MALAWIAN ZITUMBUWA

They are typically made from corn flour, bananas, sugar and then deep-fried.

Ingredients

  • 10 ripe bananas
  • 1⁄2 cup milk
  • 1 1⁄2 cups maize meal
  • 1⁄2 tsp salt
  • 2 eggs
  • 1 tsp baking soda
  • cooking oil for frying

Preparation

    Mash the peeled bananas.
    Add eggs and milk to the bananas and mix well.
    Add salt, baking soda and maize meal to the banana mixture and mix well. The consistency of your mixture must not be too hard neither too soft or runny. If the mixture is too hard add more milk, if it is too runny, add maize meal.
    Heat oil in a deep pan.
    Use the mixture to form balls, the size of your ball will depend on your size of fritter.
    Take your ball and put it on the palm of your hand, then use your four fingers to flatten the ball.
    There after fry the mixture until light golden brown. Turn to cook on all sides until light golden brown.
    Remove with slotted spoon to paper towels to absorb oil.

    Of course if you want to improve on the taste you can add other ingredients such as whole wheat flour, milk, eggs, and butter. Your batter should be almost like a dough but not too dense so that it’s still light after frying, like a doughnut. Bananas are one of the best fruit sources of vitamin B6 and also packed with potassium which helps your body maintain a healthy heart and blood pressure. Manganese helps your body make collagen and protects your skin and other cells against free radical damage.
