SARDINE STEW

Serves: 4

Preparation time: 15 minutes
Cooking time: 20 minutes
Totaltime: 35 minutes

Ingredients

  • ½ medium onion
  • 1 small green bell pepper
  • 2 tomatoes
  • 8 oz canned sardines (bout 2 cans)
  • Salt to taste
  • Tabasco to taste
  • ⅓ cup + 1 tbsp coconut milk
  • Fresh parsley to taste

Preparation

  • Step 1
    Put a little oil (from the can of sardines) in the pan. Slice the bell pepper, tomatoes and onion. Place these ingredients in a sauté pan, one on top of the other, alternating. Add the sardines on top. Season with a pinch of salt and a few drops of Tabasco.


    Step 2
    Place a lid on the pan and cook over low heat for around 15 minutes, until the vegetables are cooked and slightly firm at the same time.

    Step 3
    Add the coconut milk and chopped parsley. When the mixture comes to the boil, remove from the heat. Add a few sprigs of fresh parsley on top and serve immediately: enjoy!
