GRILLED BRUSCHETTA CHICKEN

Preparation time: 25 minutes If they like it, it serves 4 otherwise
Cooking time: 15 minutes
Totaltime: 40 minutes Chicken may be marinated for an hour and baked instead of grilled. The bruschetta can be made ahead of time
Ingredients
- 4 small boneless skinless chicken breasts (1 lb.)
- 1/4 cup sun Dried Tomato Vinaigrette Dressing, divided OR Balsamic vinegar
- 1 tomato, finely chopped, or canned diced tomatoes
- 1/2 cup shredded Mozzarella Cheese
- 1/4 cup chopped fresh basil
Preparation

Flatten the chicken breast slightly.
Coat chicken with 2 tablespoons of the dressing Marinate chicken in a shallow glass dish for 30 minutes to an hour.
Grill the chicken breasts or bake in a 400F oven t for 5 to 6 minutes. Discard the dressing.
Meanwhile, combine remaining dressing, tomatoes, cheese and basil.
Turn chicken over; place on foil. Top with tomato mixture. Grill or bake 8 min. or until chicken is done (165ºF).
Serve with pasta.
